I have to start by saying that I cannot take credit for this tomato relish recipe. I found it about a year ago online and have been consistently making it ever since! It takes about 10 minutes of prep time, 5 minutes of actual standing over the pot time and 20 minutes of leave it alone to simmer. Pretty easy and delicious and free of bad crap! Also, makes a crap load so you don’t have to make it very often!
Tomato Relish Ingredients:
- 8 tomatoes, chopped
- 2tbs tomato paste
- 1 large red onion, diced
- 2 large cloves garlic, crushed
- 1 tbs olive oil/macadamia nut oil/coconut oil (I use coconut)
- 3cm cube ginger, finely chopped
- 3 tbs apple cider vinegar
- 1 tbs honey or tiny bit stevia (I do half and half!)
- 1 tbs mustard seeds
- pinch salt
- pinch pepper
Method:
– Heat oil, add onion, garlic, ginger and tomato paste and cook until onion is translucent
– Add remaining ingredients and reduce to a low simmer for about 20 minutes.- Remove from heat, allow to cool, spoon into jars or an airtight container and store in the fridge.
NB: I put remainder jars of tomato relish in the freezer until I am ready for them. Put them in the fridge to thaw when you run out.
