It’s recipe time! If you need a stash to reach to for a healthy snack or you’ve slept in and have no time to eat before you run out the door, these savoury muffins are the perfect thing to have ready to go!
Savoury Muffins Ingredients:
– 1 cup carrots, grated
– 1 cup zucchini, grated
– handful baby spinach
– 1/2 cup quinoa flour
– 1/2 cup oats
– 1/2 cup coconut flour
– 3 teaspoons baking powder
-2 eggs, lightly beaten
-1/3 cup macadamia nut oil or coconut oil
-1 cup almond milk
– 1/4 tsp turmeric
– pepper to taste- add a tablespoon of pumpkin kernels for some crunchiness (optional)
Method
1. Preheat oven to 180degrees
2. Use muffin cups so that you don’t need to grease the tray
3. Mix the grated vegetables, baking powder, flour and oats in a bowl.
4. In a separate bowl whisk the eggs, oil and milk together
5. Add the wet ingredients to the flour mix and stir to combine well
6. Spoon into muffin cups
7. Bake for 25 minutes
8. Let cool and then keep in fridge or freezer.
